Applesauce
Ingredients
· 3 lbs. mixed apples (I use 1 lb. each, granny smith, yellow
delicious, and a red)
· 3/4 cup water
· 3/4 cup sugar
· 2 tbsp. lemon juice
· cinnamon to taste
Peel, core and quarter the apples. If you have an apple
peeler/corer/slicer this makes the prep a lot easier.
In a large pot, combine apples, sugar, and water. Bring to boil. Then
cover, lower heat, and simmer for about 20 minutes. Stir occassionally.
Once apples are tender, either puree them in a food processor or run
them through a food
mill. I usually leave some of the apples out the puree process so
there are some chunks left for the finished applesauce.
Place apples back into pot, and add lemon juice and a generous sprinkle
of cinnamon. Stir and simmer for 10 mintues to thicken.
